Cuisine – a set of traditions and recipes for cooking, due to historical, geographical and other conditions. Kitchens have ethnic, regional and other features.
There are features of culinary traditions and technologies adopted in each country or nation. Its features are inherent in, for example, Russian, French, Japanese, Turkmen and many other national or ethnic cuisines.
Within the borders of one country, various kitchen traditions can flourish. This is very noticeable, for example, in the kitchens of the regions of Italy and Germany. Elena Kostyukovich in her book “Food – Italian Happiness” vividly shows the causes of such a difference in regional cuisines of Italy. The Slow Food movement is intended to preserve the diversity of kitchen traditions.
The concepts of “European cuisine” are also generalized, combining the diverse cuisines of European countries, as well as the European-influenced cuisines of North America, Australasia, Oceania, and Latin America.
Jewish cuisine was shaped under the influence of religious customs and the restrictions (kashrut) they caused, as well as the resettlement of Jews around the world, that is, Jewish dishes in different countries of the world differ. In Israel itself, Israeli cuisine combines the traditions of Ashkenazic, Sephardic, North African, Eastern and Mediterranean cuisines.
